The Superbowl is one of the snackiness days of the year. According to the Calorie Council and the Snack Food Association we’ll consume about 30 million pounds of snacks on Super Bowl Sunday. If you need a visual…that’s equal to the weight of about 13,000 NFL linemen (big boys). That’s a lot of chips, pretzels and popcorn.
To me food and Football mean celebration. Celebration however, doesn't have to be only with crappy food. I think it can be done in a healthier way. Below is one of my favorite substitutes for one of my favorite junk foods (Cheetos) named in honor of one of my favorite teams (The Packers) “Cheeshead” Popcorn. It’s not only pretty healthy as far as snack foods go, but easy too.
Here’s the recipe:
Ingredients
½ C Organic Popcorn Kernels
4 Tbsp Organic Coconut Oil
1 C. Grated Wisconsin Cheddar (or any other variety) Cheese
Sea Salt to taste
Melt coconut oil in pan or stove top popper. Add corn kernels, pop corn until popping slows down. Remove popcorn from heat and transfer to a microwave safe glass bowl. Toss in cheese then melt cheese in microwave for 30-60 seconds. Sea salt to taste and enjoy!
I'm eyeing that recipe with great desire, but stuck on the computer HOPPING! Sounds great.
